HEALTHY TORTILLA CRUSTED BUFFALO CHICKEN
All parents should have hours of operation tattooed onto them. Nothing incites the internal groan more than finally getting your kids to bed, savoring the feat of tallying another day in the books, and then seeing one of them back out of bed in your “me time” space. I don’t care if they came down to tell you there is a small brush fire blazing outside their window, they will always be immediately assaulted with a “NOW WHAT?!”
You see, after I put the kids to bed my shop is completely shut down. When they try to squeeze in some overtime parenting after bedtime, I have nothing to offer. The drawers have been cashed out, the floor swept, and everything is locked up. I’m already moving on to finally sitting down with Ryan and having an A/B conversation without C, D, E, and F doing everything in their power from inhibiting us to string two cohesive sentences together.
When they pop back up out of bed I want to shout at them, “Can’t you clearly see my hours of operation?! It’s 9:00 P.M. and I am locked up for the night. Any transactions will have to be held off until 7:30 A.M. when I open back up for business.” Ideally it wouldn’t come to this. They’d just try the door, succumbing to the fact they aren’t getting anything more until morning, and be off on their way. But, nooooo. They have to attempt everything in their bag of tricks to make one more transaction happen.
“I can’t go to sleep.”
“Yeah, I’m usually not successful with that either when I try for two minutes. Go try again much, much longer.”
“I’m thirsty.”
“Why is this mandatory information I need to be privy to? You passed a drinking receptacle and the stuff that goes in it on your way here. Make it happen and go to bed.”
“I’m scared there’s going to be a tornado that knocks a power line down onto the tree outside our house. Then it will catch on fire and slowly engulf our house in flames.”
“Highly unlikely. Impossible actually given the current weather conditions. Go to bed.”
Maybe I am a bit aloof and cold, but I fought a good fight all day long. I left it all on the table, so for them to ask for anything more when I am clearly done with parent mode is really just too much. I’ve refereed fights, finagled school work, transported like a S.O.B, and provided them with this damn delicious meal. Given how good the Tortilla Crusted Buffalo Chicken was, I could have just mic dropped, thrown my guitar pick into the crowd and called it a day right after dinner. I hung in there, though, because tenderly kissing their sweet faces goodnight, knowing you won’t have to lay eyes on them or hear what comes out of their pie holes for another 9 glorious hours is what makes me want to reopen in the morning.

An amazing and healthy chicken recipe! The chicken is coated in crunchy crushed tortilla chips, baked with creamy buffalo topping, and smothered with cheddar cheese. It will easily become a family favorite.

Serves: 4
INGREDIENTS
- 2 large chicken breasts, butterflied and cut into 4 cutlets
- 4 ounces tortilla chips, crushed
- 1 egg, beaten with 1 tbsp. water
- ¼ cup all purpose flour or gluten free all purpose flour (I always use Cup 4 Cup Gluten Free Flour)
- 4 ounce light cream cheese, softened
- 2-3 tsp. hot sauce, such as Frank's Red Hot Sauce
- 1-2 celery stalks, diced
- ⅓ cup blue cheese crumbles
- 1 cup cheddar cheese
- green onions, ranch or blue cheese dressing, and celery for serving
INSTRUCTIONS
- Preheat oven to 375º F and spray a baking sheet with cooking spray.
Mix together cream cheese, hot sauce, blue cheese, and celery. Set aside.
Put flour mixed with a little salt and pepper, egg mixture, and crushed tortillas into 3 separate shallow bowls. Dredge chicken cutlets in flour, dip in egg mixture, and press down onto tortillas to coat all sides. Place on baking sheet and repeat with rest of chicken. Spray top of chicken with more cooking spray and bake for 15-18 minutes or until cooked through.
Remove from oven, divide and spread cream cheese mixture over the top of each piece of chicken, and sprinkle cheddar cheese over the top. Broil until topping is hot and bubbly, 2-3 minutes.
Garnish with green onions and serve with additional hot sauce, ranch or blue cheese dressing, and celery.
NOTES
For an even healthier option you can use reduced-fat blue cheese and baked tortilla chips.
Make Ahead Instructions: The cream cheese topping can be made up to a day ahead of time and stored in an airtight container in the refrigerator. I've also coated the chicken and refrigerated it for a couple hours until I was ready to bake it.
Gluten Free Adaption: Make sure you are using gluten free tortilla chips and you can substitute the regular flour for dredging with gluten free flour, such as
