Best Flavors




Shrimp Scampi Linguini

One of my favorite pasta

Ingredients:

1 pound linguini
1 pound raw shrimp, shelled and de-veined
3 tablespoons butter
2 tablespoons olive oil
½ teaspoon red pepper flakes
4 tablespoons minced garlic
½ cup white wine
1 tablespoon lemon juice
3 tablespoons parmesan cheese
2 tablespoons chopped parsley
Salt and pepper to taste

Method

Cook the pasta al dente according to package instructions.
Heat a pan over high heat then reduce to medium high heat. Add the butter and the olive oil. Once the butter is melted, sprinkle a little salt.
Stir in the red pepper flakes and the minced garlic.
Cook the garlic for just 1 minute, until it turns golden brown, and then add the shrimps.
Pour the wine and stir to coat the shrimp with the sauce of wine, oil and butter. Increase the heat to high and boil the wine for about 2 minutes.
Add the parmesan cheese and stir the shrimp. Arrange them so that you turn them over to cook on the other side. Continue to cook on high heat for 1 minute more.
Add the cooked pasta and stir for 1 minute.
Remove from the heat and sprinkle with lemon juice, parsley,  and add salt and pepper to taste. Toss to combine.
