COCONUT, VANILLA & ALMOND BUTTER SMOOTHIE
Chaos. Pure Chaos. But all good chaos. Does that even exist?

Both of my sister in laws had their babes on Friday. My brother’s wife was scheduled to be induced on Thursday but was postponed to Friday. And then the twins from future sister in law just thought it would be fun to make an early entrance into the world, instead of this upcoming Tuesday! They are so clever.
Luckily, they were both at the same hospital so that was less of a headache but one minor detail. The babes were about 10 hours apart. My niece Nora said hello to the world at 1:11pm and the twins, Beckett and Lyla, said hello at 11:35pm & 11:36pm.
So what do you think a young, not quite married couple would be doing on a Friday night? Asleep? Well that is typically the answer, but this Friday night we decided to venture out of the town. Rare siting these days! After dinner and a few cocktails later, we got a call from our brother in law that my fiancé’s sister was in labor. Oh goodness. A few things flew through my head…like maybe we shouldn’t have had those shots? Kidding! Sorta.
And we need to go!
So up to the hospital we went! We were so excited for many reasons. How crazy is that all three babes decided to enter the world on the same day?! 4.4.2014. Definitely never forget that birthday! And we will forever be bouncing back and forth between birthday parties.
All good chaos is ahead for us. With so much chaos this weekend, a simple, non-complicated breakfast was a necessity. As the weather temperature increases, so does my cravings for smoothies. For some odd reason that I cannot explain, smoothies during the colder months do not appeal to me. Crazy because I drink iced coffee and down ice cream like its going out of style all year long. I told you I’m a lil weird….
Coconut milk and almond butter create a velvety texture, with fresh vanilla specks throughout. To balance out last’s weeks Mexican fiesta, I sweetened the smoothie with dates; which I love for their caramel undertones. Dates are a staple in our house from making our favorite appetizer to eating straight with a spoonful of peanut butter for a quick pre-workout pick me up. So tasty.
While this smoothie is a velvety, addicting and healthy smoothie to start your day, I savor it just as much for a night cap to a chaotic weekend.
So please excuse me will I go hit the snooze just a few more hundred times.

A velvety smoothie made with coconut milk, vanilla, almond butter and sweetened with dates!

Serves: 2
INGREDIENTS
- 1 cup coconut milk
- ¼ cup almond butter
- 10 small dates
- 1 tsp vanilla paste, (or vanilla extract)
- 2 cups ice
- Sweet Leaf Stevia Vanilla Creme, or Truvia, to taste
- Optional: Vanilla Protein Powder
INSTRUCTIONS
- Add all ingredients except ice to blender. Puree well.
- Add ice and blend until ice is all crushed and
smoothie is well blended and smooth. - Pour into two glasses and serve immediately.
NOTES
*Add more or less ice to make the smoothie thinner or thicker consistency.
*Vanilla protein powder would be great to add for a post workout smoothie!
*Add the stevia if the dates or not sweet enough and for more intense vanilla flavor.
